Pasta with French Green Beans and Shrimp

A delicious pasta with Haricots verts and prawns. It's a flavorful pasta dish that gets its depth and character from a rich base of tomato puree, a touch of heat from cayenne pepper, and a creamy finish from both crème fraiche and sour cream, balanced with a sweet note from the honey.

You will need
Olive oil
10.5 oz frozen French green beans (Haricot verts), thawed and each bean cut into 3 pieces
3 tbsp tomato paste
6 cloves of garlic, grated on the coarse side of the grater
1 tsp cayenne pepper
1 tsp white pepper
Salt
7 oz cooked shrimp, peeled weight
2 cups crème fraiche
1/3 cup heavy cream
2 tsp honey
2/3 cup Parmesan cheese + Parmesan cheese to sprinkle over, finely grated

How to make it
1. Heat up olive oil in a pot. Fry the green beans on high heat while stirring for about 3 minutes.

2. Lower the heat and stir in the tomato paste. Fry while stirring for 2-3 minutes.

3. Add garlic, cayenne pepper, white pepper, and salt. Fry for a minute while stirring.

4. Add the shrimp and stir so that everything mixes. Fry while stirring for a minute.
7 oz cooked shrimp, peeled weight
5. Add crème fraiche, heavy cream, and honey. Let it simmer for a few minutes.

1/3 cup heavy cream
2 tsp honey
6. Add grated Parmesan and stir to mix. Taste and adjust with spices and honey if needed.
2/3 cup Parmesan cheese
7. Serve with tagliatelle and grated Parmesan.

Tip: Save the shells and heads from the shrimp. Put them in a bag and freeze until you have enough to make a seafood stock.
