Truffle and chanterelle pockets

The treasures of the forest are among the best there is. Try this recipe for Truffle and Chanterelle pockets made with filo pastry. It is simple but luxurious and can be served as a hors d'oeuvre or as a tapas. The delicious flavors are a combination of the luxurious taste of truffle and the earthy notes of chanterelles embedded in a crispy phyllo dough shell. Can it get any better?

You will need

8 sheets of phyllo dough

5.3 - 7.1 oz of butter, melted

12 tbsp of flavorful truffle cheese, finely grated

1 tbsp of butter for frying

12 tsp of fried chanterelles

Kosher salt

Freshly ground black pepper

How to make it

1. Preheat the oven to 437°F.


2. Clean and cut the chanterelles into smaller pieces. Place them in a hot frying pan and cook while stirring until all the liquid has evaporated.

3. Add butter and fry until the chanterelles are crispy.

4. Season with Kosher salt and pepper. Put the chanterelles in a bowl and set aside.

5. Grate the cheese and put it in a bowl.

12 tbsp of flavorful truffle cheese, finely grated


6. Melt the butter and then lay out a sheet of phyllo dough on a large cutting board (make sure the other sheets are covered with plastic or a damp towel so they don’t dry out). Brush with butter and then put another sheet of phyllo dough on top. Brush with more butter.

7. Cut the buttered phyllo dough into three parts along the short side.


8. Put 1 tbsp of cheese in a small pile on each part about 2 inches from the edge. Top with 1 tsp of chanterelles (or more if desired).

9. Fold over the cheese and chanterelle pile with the edge of the phyllo dough once. Then fold in the long side over the folded edge. Then roll it up so that it becomes small packages and put them on a baking sheet.


10. Brush the outside with melted butter all around.


11. Bake in the oven for about 10 minutes until they have a nice color.


Serve as a Tapas or snack with a glass of wine.
